This is a non traditional recipe. First, it is how to cook spaghetti squash, then what you can put with it. Spaghetti squash is a great replacement for noodles in pasta dishes. It is pretty easy to prepare in about the same amount of time as regular noodles. All you have to do after washing is to poke some holes in it like you would a potato and put it on a microwave safe plate and cook for about 10 minutes. Then let it cool for 10 minutes. Cut it in half lengthwise. Use a fork to get the seeds out. Then use the fork to scrape the “noodles” out of the flesh of the squash. Make sure you drain really well after. Then just use with your choice of sauce to make spaghetti, alfredo, chili, etc.
Choose your protein to serve with it such as chicken, meatballs, or lean ground turkey. I like to chop a package of mushrooms and cook with 1 lb of lean ground turkey. It helps the meat go further in our big family and helps to cut the calories. It helps to be sneaky sometimes getting the kids veggies in too.
I also like to cook some fresh sliced mushrooms, chopped raw tomatoes, garlic and 1 tbs of extra virgin olive oil in a skillet until soft.
